Ingredients:
For the spring roll filling:
- 8-10 spring roll wrappers (rice paper)
- 1 cup cooked vermicelli noodles (rice noodles)
- 1 cup shredded lettuce
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1 cup bean sprouts
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- Cooked protein of your choice (shrimp, chicken, tofu, or a combination)
- Optional: sliced avocado, bell pepper, or any other vegetables you like
For the dipping sauce:
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey or sugar
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- 1 teaspoon sesame oil
- Optional: chili flakes or sriracha for heat
Instructions:
Prepare the Filling:
- Cook the vermicelli noodles according to package instructions, then drain and let them cool.
- Prepare all the vegetables by shredding, slicing, or chopping them into thin strips.
Prepare the Dipping Sauce:
- In a small bowl, whisk together the soy sauce, rice vinegar, honey or sugar, minced garlic, grated ginger, sesame oil, and chili flakes or sriracha if using. Adjust the seasoning to taste.
Assemble the Spring Rolls:
- Fill a shallow dish with warm water. Working with one wrapper at a time, dip it into the water for about 5-10 seconds until it becomes soft and pliable.
- Carefully transfer the softened wrapper to a clean work surface, such as a cutting board or a damp kitchen towel.
- Place a small portion of each filling ingredient (noodles, lettuce, carrots, cucumber, bean sprouts, herbs, and protein) in the center of the wrapper, leaving some space at the edges.
Roll the Spring Rolls:
- Fold the bottom edge of the wrapper over the filling, then fold in the sides, and roll it up tightly into a cylinder, similar to rolling a burrito.
- Continue rolling until the entire wrapper is wrapped around the filling, sealing the edges by pressing lightly.
Serve and Enjoy:
- Repeat the process with the remaining wrappers and filling ingredients.
- Arrange the spring rolls on a serving platter and serve them with the dipping sauce on the side.
